A long, slow evolution in wood culminating in a moment of enchantment: uncorking a bottle that speaks eloquently for a landscape, for vineyards carefully tended by hand, for our belief in what we do.
The outcome is a wine of considerable complexity that will continue to evolve and mature for the next several years. The initial impact in the mouth is of plenty of fresh fruit: berries, followed by cherries and then a hint of cinnamon. The finish is pleasantly long and spicy.
The vineyards of our family-run estate imbue our wine with its particular palate and aromas. We refuse to acquire grapes from elsewhere, which means that our output is limited. We are proud of this distinctiveness.
Brunello di Montalcino Podere Paganico DOCG

Grape variety: 100percent Sangiovese
Maximum grape yield: 7000 kg per hectare
Release: January of the 5th year following the harvest, in accordance with the DOCG rules
Colour: intense ruby red with a hint of purple
Nose: Intense, spicy and persistent, evolving as the wine ages
Palate: Dry, warm, with a certain soft freshness, distinctive tannins and a firm flavoursome body
Alcohol content: around 14°
Total dry extract: g/l 33
This wine is made from a hand picked selection of our estate-grown grapes, which are taken without delay to the cellars for fermentation. This takes place in steel vats (the largest holds 5000 litres), with the addition of cultivated yeasts following a few days of maceration on the skins.
Once fermentation is completed, the future wine remains on the skins for a further 2-3 weeks. The lees are then drawn off, malolactic fermentation takes place and the wine is transferred into 25-30 hl Allier oak casks for 3 years' ageing. After bottling, the wines are aged for a further 2 years. In January of the 5th year the bottles are labelled and released for consumption.
We produce 7000 bottles per year.
